In 1969, Hopkins was a member of the short-lived Sweet Thursday, a quintet comprising Hopkins, Alun Davies (who worked with Cat Stevens), Jon Mark, Harvey Burns and Brian Odgers. The band completed their eponymous debut album ; however, the project was doomed from the start.
While in Mill Valley he married his first wife Linda, universally known as Dolly. His tours with the Rolling Stones included the legendary 1972 visit to the USA and after being credited on Beggar’s Banquet, Let It Bleed, Sticky Fingers, Exile On Main Street and Jamming With Edward his growing fame led to another recording contract with Columbia.

Memorial. On 8th September 2018 a memorial for Nicky in the form of a “piano” park bench was unveiled by Nicky’s widow, Moira Hopkins, in the presence of the Mayor of Ealing in Perivale Park, Ealing, London, his birthplace.
