Hitchcock, was prominent in Nebraska politics, and served as United States Senator from Nebraska between 1871 and 1877. He was educated in the city’s public schools and for two years attended the gymnasium (high school) in Baden-Baden, Germany.

Senator Hitchcock's most significant contribution while in the Senate was his leadership of the fight for the ratification of the Treaty of Versailles and the Covenant of the League of Nations in 1919-1920. Gilbert M. Hitchcock Elementary School and Hitchcock Park in Omaha were named in his honor.
