As a teenager, Ellman took drum lessons with Jim Chapin. Ellman attended Berklee College of Music and toured with the music group Manhattan Transfer. Later, he became the drummer for Bette Midler, Barry Manilow and Moogy Klingman. Additionally, Ellman was selected as the drummer for Utopia.
In 1975, Ellman ended his musical career and joined his father’s family business, Beefsteak Charlie's. He returned to playing the drums with John Siegler and Don Sarlin in 2000.
