Guy Périllat (* 24. Februar 1940 in La Clusaz, Frankreich) ist ein ehemaliger französischer Skirennläufer. Er ist zweifacher Weltmeister und zweifacher Olympiamedaillengewinner.

Guy Périllat Merceroz (born 24 February 1940) is a former World Cup alpine ski racer from the resort of La Clusaz, Haute-Savoie, one of the top ski racers of the 1960s.
Während eines französischen Überfalls (7 von 8 Titeln und 16 von 24 Medaillen) in Portillo im Jahr 1966 gewann Périllat den Titel eines Weltmeisters im Riesen und eine Silbermedaille im Slalom. Er wird jedoch während seiner Karriere keinen olympischen Titel gewinnen.
In the era before World Cups, Périllat won all the classic downhill races – Wengen, Kitzbühel, Megève, Chamonix, and Saint Moritz. His victories at Wengen and Kitzbühel made him only the third skiier to accomplish that double in the same year, after Toni Sailer (1956-57) and Christian Pravda (1954).
